Pectinase breaks down pectin, breaking down plant cell walls and intercellular layers, making it easy to extract juice, and pectin breaks down into soluble galacturonic acid, which also makes cloudy juice become clear. Pectinase is mainly found in higher plants and microorganisms, and is also found in some protozoa and insects. At present, the main source of commercially available food grade pectinase is the metabolite of Aspergillus Niger. Pectinase plays a very important role in fruit juice production. Under normal circumstances, the fruit juice after crushing contains pectin, cellulose and other solids, according to the molecular size, pectin plays the role of plant fiber, it will prevent or even make the liquid flow stop, so that the solid particles remain suspended, the juice is in a uniform turbidized state. Therefore, the production of juice must be pectin decomposition, so that it is inactive, in order to make the juice to achieve the purpose of clarification, and pectinase can play this role.
