Diastase is the general name of enzymes that hydrolyze starch and glycogen. Usually, diastase catalyzes the hydrolysis of starch slurry on fabrics. Due to the high efficiency and specificity of amylase, enzyme desizing has a high desizing rate, fast desizing, less pollution, and the product is softer than acid and alkali methods, and does not damage the fiber.

• Diastase is a digestive enzyme secreted mainly by the pancreas and salivary glands, but it is also rarely found in other tissues. Diastase was first described in the 1800s and is considered to be one of the first enzymes in history to be studied scientifically. It was originally known as the offensive digestive fluid, but was later renamed Diastase in the early 20th century. The main function of Diastase is to hydrolyze glycosidic bonds in starch molecules, converting complex carbohydrates into monosaccharides.
• There are three main types of amylases: alpha -, beta -, and gamma-Diastase act on different parts of the carbohydrate molecule, respectively. Alpha-Diastase can be found in humans, animals, plants, and microorganisms. Beta-Diastase is found in microorganisms and plants. Gamma-Diastase is found in plants and animals.
